If you are like me and love to grow your own tomatoes (they taste SO much better than the store bought ones), you probably have the same dilemma that I have around this time of year. I have way too many tomatoes, and I am always looking for recipes to use them up. Because I have this dilemma every year, I decided to put together a list of the recipes I like that use up a lot of tomatoes.

White Wine Lemon Herb Shrimp Rotini

One of my favorite tomato-using recipes is this White Wine Lemon Herb Shrimp Rotini. Not only does it have tomatoes, but also fresh basil, and shrimp in a white wine lemon sauce. It doesn’t get much better than this in my books!
Spaghetti Meat Sauce
This spaghetti sauce is a tomato-based sauce that tastes great and uses a lot of tomatoes! It also freezes very well, so I like to make a batch and freeze half of it for future meals.
If you want less fat and fewer calories and still get all the taste, you can use ground turkey or chicken with this recipe (instead of ground beef).
This Greek Tilapia recipe has a tomato-based topping that adds a lot of flavor to a fairly bland fish.
If you do not like tilapia, you can substitute other fish such as halibut or red snapper.
Lasagna also uses a tomato sauce that takes a fair number of tomatoes. This version uses ground turkey, but you can substitute ground beef if you prefer.
Tomato Chicken Pesto Pasta
This pasta dish combines tomatoes with pesto and chicken for a hardy and zesty meal. It also uses goat cheese for garnish (which adds even more flavor), but you can substitute parmesan if you prefer a more traditional cheese.
Nachos With Homemade Salsa
Home made salsa tastes so much better than the store-bought kind especially when you are using fresh tomatoes. And then there’s the added benefit that you can put whatever toppings you want to the nachos.
Crock Pot No Bean Turkey Chili
Making chili with fresh tomatoes adds some extra flavor to an already flavorful meal. The original version of this recipe uses ground turkey instead of ground beef, but you can substitute if you want.
With all of these recipes, you should be able to use up a good portion of those extra tomatoes!
