Rice Pilaf is a traditional dish that adds extra flavor to standard rice (and I love it!)  However the standard rice pilaf recipes require some extra steps in the cooking process that add time and effort to the meal preparation…and because of that I almost never made it.  Then I discovered that you can make a simplified rice pilaf that tastes almost as good as the traditional recipe but doesn’t take any more time than standard rice…a win, win situation in my books!

Ingredients
  

  • 1 cup basmati rice or other white rice
  • cups chicken stock
  • 1 teaspoon of minced garlic or 1 clove garlic, minced
  • 3 or 4 sprigs of fresh thyme or 1 tsp of dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf

Instructions
 

  • Heat the chicken stock to boiling in the pot.
  • Add the rice and stir so that it doesn't stick to the bottom.
  • Add the rest of the ingredients to the pot.
  • Reduce the heat to low.
  • Cover the rice with a lid.
  • Cook for 15 minutes.

Remove the bay leaves from the rice and serve hot.  You will be amazed at how much flavor a few easy spices can add!
