These bunny bum cupcakes are the cutest thing to ever hop onto my Easter buffet!

Seriously, if you’re looking for a festive treat that’s both adorable and easy to whip up, this is it.

They’re made with cake mix, so you don’t need to be a pastry chef to pull these off (which is a relief when you’re busy putting together a holiday meal).

But the frosting and decorations are made from scratch, so they still have some of that homemade charm.

Plus, the bunny butt decorations just add that extra sprinkle of fun that makes everyone smile.

Here is your shopping list (for 24 cupcakes):

  • Cake mix and related ingredients – 1 package white or yellow cupcake mix plus whatever ingredients it calls for on the package. For mine that was 1 cup water, ½ cup oil, and 3 eggs, but yours may be slightly different.
  • Dairy – 1 cup unsalted butter, 3 Tablespoons milk
  • Sugar – 4 cups powdered sugar
  • Seasoning – 1 teaspoon salt
  • Flavoring – 1 teaspoon vanilla
  • Candy – ¼ cup white chocolate or candy melts, ¼ cup pink candy melts. ,
  • Candy sprinkles – ½ cup green sprinkles or Easter sprinkles

Substitutions & Additions

  • You can substitute the cake mix for your favorite homemade cupcake recipe if you prefer.
  • To use salted butter instead of the unsalted butter, decrease the added salt to ½ teaspoon.

How to make bunny bum cupcakes

  • 1 | Prep work

    Take the butter out of the refrigerator a couple of hours ahead of time so it will soften by the time you need to use it.

    Start by lining 2 muffin tins with cupcake liners. Or if you only have 1 muffin tin, you can bake them in 2 batches.

    Preheat your oven to 350°F (175°C).

  • 2 | Make the cupcakes

    In the bowl of a stand mixer, combine the cake mix, water, oil, and eggs. Mixing thoroughly is key here, so use the paddle attachment and mix on medium speed.

    Scrape down the sides of the bowl often with a spatula to ensure all ingredients are well incorporated, and mix for about 2 minutes until the batter is smooth.

    Fill each cupcake liner about ⅔ full with the batter. This allows room for the cupcakes to rise without spilling over.

    Bake in the preheated oven for about 14 to 16 minutes.

    To test for done-ness, insert a toothpick into the center of a cupcake. it should come out clean.

    Let them cool completely on a cooling rack before decorating. Cooling is crucial, as frosting warm cupcakes will cause the icing to melt.

  • 3 | Make the bunny feet and tail

    Melt the white chocolate chips in a microwave-safe bowl by heating it in short intervals (15 to 20 seconds) and stirring in between to prevent overheating.

    Once smooth, transfer it to a piping bag.

    Lay out a piece of parchment paper on your work surface. This will make removing the chocolate shapes easier once they set.

    Pipe small flower-shaped dollops for the bunny tails using the white chocolate. Or if you don’t want to get that fancy, you could also make them into balls.

    It’s a good idea to make extra in case some break.

    For the feet, pipe oval shapes with the white chocolate, two per cupcake, plus extras.

    Then melt the pink candy melts using the same process as for the white chocolate.

    Transfer it to a piping bag.

    Add small dots of pink candy melts at the top of each foot and a larger oval in the center for the paw pad.

    Allow these to set completely; this might take a few minutes.

    Once set, carefully peel them off the parchment.

    Pro tip:

    If you find that the chocolate starts to harden before you are finished piping, you can put it back in the microwave for a few seconds to soften it up. Adding 1 teaspoon of coconut oil to the mixture will also make it easier to work with.
  • 4 | Make the frosting

    In a stand mixer, combine half of the powdered sugar with softened butter, vanilla, and a pinch of salt. The whip attachment works best for making icing.

    Mix on low speed initially to prevent the sugar from puffing out of the bowl.

    Scrape down the sides frequently to ensure everything mixes evenly.

    Add the remaining powdered sugar and milk, mixing again on low until incorporated.

    Increase the speed to medium and whip until the frosting is smooth and fluffy. This aerates the frosting, making it light and easy to work with.

  • 5 | Decorate

    Once your cupcakes are completely cool, spread sprinkles on a plate or shallow bowl for easy rolling.

    Use an offset spatula or knife to spread a thin layer of frosting over each cupcake’s top, then immediately roll the outside edges in the sprinkles to coat.

    After all of the cupcakes have sprinkles, transfer the remaining frosting to a piping bag fitted with a large round tip.

    Pipe a generous mound of frosting in the center of each cupcake.

    Place a bunny tail on top of the frosting mound, then position two feet pointing downward toward the front. This arrangement gives the appearance of a bunny diving into the cupcake, with the tail and feet sticking out.

To store bunny butt cupcakes and keep them fresh, place the cupcakes in an airtight container. Ensure the container is tall enough to avoid smushing the decorations.

Then store in the refrigerator for up to 3 days.

Make the decorations

  • Melt the white chocolate in a small microwave safe bowl and stir until smooth. Transfer to a piping bag with a small round piping tip.

  • Spread a piece of parchment across your work surface.
  • Using the melted white chocolate, pipe 24 small flower shapes for the bunny’s tail.
  • Then pipe 48 white chocolate ovals for the bunny feet.
  • Melt the pink candy melts. Transfer to a piping bag with a small round tip.
    ¼ cup pink candy melts
  • Pipe a paw print on each of the white chocolate ovals using the melted pink candy.
  • Allow the candy melts to set completely before attempting to carefully remove from the parchment.

Make the frosting

  • In the bowl of a stand mixer, combine about half of the powdered sugar with the softened butter, vanilla and salt.
    4 cups powdered sugar, 1 cup unsalted butter, 1 teaspoon vanilla, 1 teaspoon salt
  • Mix on low until combined, scraping the sides often.
  • Add in the remaining powdered sugar and the milk.
    3 Tablespoons milk
  • Mix on low until combined.
  • Scrape down the sides and then increase the speed to medium. Continue to whip until the frosting is smooth and fluffy.

Decorate the cupcakes

  • Once cupcakes are cool, spread out the sprinkles on a plate or shallow bowl.
    ½ cup green sprinkles / Easter sprinkles
  • Use an offset spatula or knife to spread a thin layer of frosting over the top of each cupcake. Immediately roll the outside edges in the sprinkles.
  • Transfer the remaining frosting to a piping bag fitted with a large round tip.
  • Pipe a large round mound of frosting in the center of each cupcake.
  • Place a bunny tail on the top of the frosting mound and two feet pointing down toward the front side of the frosting mound.

Notes

  • If your cake mix uses different ingredients than listed here, replace the water, oil and eggs with the directions on the package.
  • To use salted butter instead of the unsalted butter, decrease the added salt to ½ teaspoon.
  • The white chocolate bunny tails and feet break easily, so you might want to make a few extra just in case you need them.
