
Why I love this Lucky Charms cupcakes recipe
Some St. Patrick’s Day desserts look cute but take way more time and effort than most of us want to spend in the kitchen.
These Lucky Charms cupcakes are the opposite.
Since they’re made from a box mix, they’re super easy to make.
Even the homemade marshmallow frosting is surprisingly easy to whip up
And the green and white colors with the Lucky Charms on top make it feel like you really did something special for the holiday.
It’s also a great recipe when you need something festive for a party, school event, or last-minute dessert.
They’re the kind of fun treat that both kids and adults love.

Ingredients

Here is your shopping list (for 24 cupcakes):
- Cake mix – 1 box of white cake mix.
- Cereal – 3 Tablespoons Lucky Charms, plus more for decorating.
- Coloring – 3 or 5 drops green gel food color
- Oil – Follow the cake mix instructions for the amount.
- Eggs – Follow the cake mix instructions for the amount.
For the frosting:
- Dairy – 1 cup (2 sticks) salted butter, 3 Tablespoons heavy cream
- Jarred goods – 6 ounces marshmallow fluff
- Sugar – 4 cups powdered sugar
- Flavoring – 2 teaspoons vanilla extract
Substitutions & Additions
- To use unsalted butter instead of salted butter, add 1/8 teaspoon salt to the frosting mixture.
How to make Lucky Charms cupcakes

1 | Prep work
Take the butter out of the refrigerator a couple of hours before you plan to start baking. Softened butter is much easier to mix and will give you a smoother batter.
Line your cupcake tins with paper liners.
Crush the Lucky Charms cereal with a rolling pin. To do this, place the cereal in a Ziploc bag and roll over it with a rolling pin to crush it into small pieces.
I left the marshmallows out because I didn’t want the batter to be too sweet. But you can leave them in if you prefer.
Pre-heat the oven to 350°F (or whatever temperature is specified for the cake mix).
2 | Mix the batter
Pour the cake mix into a large mixing bowl.
Remove 3 tablespoons of the cake mix from the bowl.
Then add 3 Tablespoons of the crushed Lucky Charms cereal to replace it.
Add the eggs, oil, and water to the cake mix according to the instructions on the box.
Then Add 3 to 4 drops of green food gel color to the batter. Use gel food coloring instead of liquid for more vibrant color without thinning the batter.
Mix everything until just combined. Don’t over mix, as this can make the cupcakes dense.
3 | Bake the cupcakes
Fill each cupcake liner about 2/3 full with the batter. Using a cookie scoop helps keep the portions even.
Bake the cupcakes according to the time on the box, usually around 15 to 18 minutes. Check for done-ness by inserting a toothpick into the center; it should come out clean.
Remove the cupcakes from the oven and let them cool in the pan on a cooling rack.
4 | Make the frosting
In a clean mixing bowl, beat the softened butter and marshmallow fluff on medium-high speed until fluffy and well combined, about 3 minutes. This step creates a light, airy frosting.
Add the vanilla extract and mix for another minute to incorporate the flavor.
Then add the powdered sugar gradually and mix on low speed until fully incorporated. This prevents a cloud of sugar from puffing up and keeps the frosting smooth.
While mixing, slowly pour in the heavy cream.
Turn the mixer to medium speed and beat until the buttercream is smooth and creamy, about 1 minute.
5 | Decorate
Once the cupcakes have completely cooled, they are ready to be decorated.
First, dip a toothpick in the green food gel color and then wipe it inside the piping bag. This isn’t absolutely necessary but creates that white and green striped look on the frosting.
Just be careful that you don’t poke holes in the bag while you’re doing this. You want the streaks, not leaks.
Add the frosting to the piping bag and secure the end tightly.
If you don’t have a piping bag, a Ziploc bag with a small hole cut in one corner works just as well.
Pipe swirls of frosting on top of each cupcake, starting from the outside and spiraling inward and upward like a soft ice cream cone.
Sprinkle the Lucky Charms cereal randomly over the frosting, pressing lightly so the cereal sticks.
And that’s it! Your cupcakes are ready to serve!
Storage
Store Lucky Charms cupcakes in an airtight container in the refrigerator for up to 5 days.
To prevent the cereal toppings from getting soggy, store the cupcakes without the toppings and add them just before serving.

Lucky Charms Cupcakes
Ingredients

- 3 Tablespoons Lucky Charms crushed, plus more for decorating
- oil (use the amount from the cake mix box)
- water (use the amount from the cake mix box)
- eggs (use the amount from the cake mix box)
- 3 to 4 drops green gel food color
- 1 cup salted butter softened
- 6 ounces marshmallow fluff
- 2 teaspoons vanilla extract
- 4 cups powdered sugar
- 3 Tablespoons heavy cream
Equipment
- Rolling Pin
- ziploc bag
- cupcake tin with liners
- measuring cups and spoons
- mixer and mixing bowl
- ice cream scoop (optional)
- Cooling rack
- piping bag with a large round piping tip
- tooth pick
Instructions
- Preheat the oven to 350℉ (or whatever temperature is listed on the cake mix box)
- Pour the cake mix into a mixing bowl.1 box white cake mix
- Replace 3 tablespoons of the cake mix with the crushed Lucky Charms.3 Tablespoons Lucky Charms
- Add the eggs, oil, and water to the cake mix according to the instructions on the box.oil (use the amount from the cake mix box), water (use the amount from the cake mix box), eggs (use the amount from the cake mix box)
- Add 3-4 drops of green food gel color to the mixing bowl.3 to 4 drops green gel food color
- Mix all the ingredients until combined.
- Put cupcake liners in a cupcake pan.
- Fill the cupcake liners ⅔ full with the cupcake batter.
- Bake the cupcakes according to the directions on the box.
- Let cool in the pan on a cooling rack.
- In a clean mixing bowl, mix the butter and marshmallow fluff on medium-high speed until fluffy and combined. About 3 minutes.1 cup salted butter, 6 ounces marshmallow fluff
- Add the vanilla extract and mix for about 1 minute.2 teaspoons vanilla extract
- Add the powdered sugar and mix on low speed until combined.4 cups powdered sugar
- While mixing, pour in the heavy cream.3 Tablespoons heavy cream
- Turn the speed up to medium. Mix until the buttercream is smooth, about 1 minute.
- Dip a tooth pick in the green food gel color and then wipe the inside of the piping bag with it. This will give the buttercream green streaks.3 to 4 drops green gel food color
- Add the buttercream to the piping bag and secure the end.
- Pipe swirls on top of the cupcakes.
- Sprinkle the Luck Charms cereal randomly around the top of the frosting. Push them in a little so they don't fall off.
Notes
- I only crush the cereal part (not the marshmallows) from the Lucky Charms cereal to prevent the batter from being too sweet.
- If you prefer to use unsalted butter, add 1/8 teaspoon salt to the frosting.
