Why I love this avocado deviled eggs recipe

If you’re looking for a quick appetizer that still feels a little special, this easy avocado deviled eggs recipe is my go-to.

They’re creamy from the sour cream and avocado, brightened up with a squeeze of lemon juice, and finished with a simple sprinkle of salt and pepper. Nothing fussy, just delicious.

The best part?

That naturally gorgeous green filling looks right at home on a holiday platter.

I make them for Christmas (they pop against all the red), Halloween (perfectly witchy green), St. Patrick’s Day (of course!), and honestly anytime I need something easy that everyone will grab first.

Boil the eggs (or buy them already boiled and peeled to save a ton of time!), mash in the avocado, stir in the sour cream and lemon, season to taste, and you’re done.

Simple, fresh, and always the first plate to disappear at a party.

Here is your shopping list (for 12 half eggs):

  • Eggs – 6 hard-boiled eggs. I like to buy hard boiled eggs that are already peeled. It saves so much time and is so much easier than making them from scratch that I think it’s definitely worth the extra money.
  • Fresh produce – 1 avocado, ½ lemon
  • Dairy – 2 Tablespoons sour cream
  • Seasoning – Salt, Black pepper
  • Garnish – Fresh parsley, Paprika powder

Substitutions & Additions

  • If you want to boil your own eggs:
    • Place a pot on the stove over medium-high heat and start boiling water in it.
    • Once the water reaches a boiling point, carefully add the eggs, and let them cook for 8-10 minutes.
    • Remove the eggs from the boiling water and transfer them to a bowl filled with ice water to cool down.
    • Peel them once they have cooled to room temperature.
  • Replace the lemon juice with lime juice if desired.

How to make avocado deviled eggs

  • 1 | Prep work

    Peel the avocado and remove the pit.

    To do this easily, cut the avocado lengthwise around the seed, then twist the halves in opposite directions to separate them. Use a spoon to remove the pit. Then scoop the flesh into a mixing bowl.

    Juice half a lemon into the bowl.

    Chop the parsley.

  • 2 | Make the filling

    Cut the boiled eggs in half lengthwise.

    Then scoop out the yolks with a small spoon or knife. Place them into the bowl with the avocado.

    Mash the avocado and yolks together thoroughly with a fork, pressing out any lumps.

    Add the sour cream, salt, and pepper.

    Mix everything together with the fork until the mixture is smooth and creamy.

  • 3 | Pipe onto eggs

    Transfer the mixture into a piping bag fitted with a large tip or a plastic sandwich bag with the corner snipped off.

    Carefully squeeze the filling into the hollowed egg whites.

    Since there is quite a bit more filling than came out of the eggs originally, it should create a mound above the egg.

    Pro tip:

    Piping gives a neat, professional look. Hold the bag at a 45-degree angle and gently squeeze to fill each egg. If you don’t have a piping bag, you can use a small spoon to carefully fill the eggs, but piping makes it look more polished.
  • 4 | Garnish and serve

    If desired, sprinkle a little paprika and/or chopped parsley over the top for color.

    Garnishing not only makes the eggs look pretty but also adds extra flavor.

    Serve immediately or refrigerate until ready to serve.

How to make ahead

To make ahead of time:

  • Prepare the filling in advance following the directions above.
  • Store the mixture in an airtight container in the refrigerator, pressing a piece of plastic wrap directly onto the surface to prevent browning.
  • When ready to serve, pipe the filling into the egg whites and add the garnish.

Because the avocado can go brown, I don’t recommend assembling the eggs too far in advance or they may not look too appealing.

Ingredients
  

  • 6 hard-boiled eggs
  • 1 avocado peeled and pitted
  • 2 Tablespoons sour cream
  • ½ lemon juiced
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped for garnish
  • Paprika powder for garnish

Instructions
 

  • Cut the boiled eggs in half lengthwise and scoop out the egg yolks into a bowl.

  • Add the avocado.

  • Mash the avocado and eggs together with a fork.
  • Add sour cream, lemon juice, salt, and pepper to the bowl. Mix everything together until well combined.
    2 Tablespoons sour cream, ½ lemon, Salt, Black pepper
  • Transfer the avocado and egg yolk mixture into a piping bag and carefully pipe it back into the hollows of the egg whites.
  • If desired, garnish the deviled eggs with paprika powder and chopped parsley for added flavor and presentation.

Notes

  • I like to buy the eggs already boiled and peeled. It just saves so much time.
  • However, if you prefer to boil your own, follow these instructions:
