Why I love these red white and blue popsicles

These homemade red white and blue popsicles are one of my favorite summer desserts that are just perfect for the 4th of July.

These aren’t just any popsicles. They’re layered with strawberries, blueberries, and Greek yogurt. So not only do they scream USA but are also a hit at any backyard bash.

And because they use honey (or maple syrup) instead of regular sugar, the real fruit flavors really shine through.

Which makes them a fresher, tastier option than the traditional sugary rocket pops.

So, this 4th of July, I’m all about these easy-to-make, guilt-free treats that everyone can enjoy!

Here is your shopping list (for 12 popsicles):

  • Fresh produce – 1 cup strawberries, 1 cup blueberries. ,
  • Sweetener – 3 Tablespoons honey or maple syrup – We will use 1 Tablespoon for each of the red, white and blue layers
  • Dairy – ¾ cup Greek yogurt
  • Flavoring – ½ teaspoon vanilla extract

Substitutions & Additions

  • Replace the strawberries with raspberries, if desired.
  • You can use frozen strawberries and blueberries instead of fresh fruit if that’s what you have on hand. Just ensure they are thawed slightly before blending to achieve a smooth consistency.
  • If you prefer not to have any added sweetener, you can omit the honey.

For a dairy-free version, replace the yogurt with coconut milk

Special equipment

To make popsicles, you will need a popsicle mold and some popsicle sticks.

I used this one* from Amazon.

It’s silicone which makes it easy to remove. And comes with a starter pack of 50 popsicle sticks and 50 storage bags.

How to make red white and blue popsicles

  • 1 | Prep Work

    Wash and hull the strawberries.

    Wash the blueberries.

  • 2 | Make the red layer

    Start by blending 1 cup strawberries with 1 Tablespoon honey and a bit of water in a blender until you get a smooth mixture.

    Carefully pour this mixture into your popsicle molds, filling them one-third of the way to leave room for the other layers.

    Place the mold in the freezer and let it set for about an hour.

    Pro tip:

    To prevent the layers from bleeding into each other, make sure this layer is completely frozen before continuing to the next step.
  • 3 | Make the white layer

    In a mixing bowl, combine ¾ cup Greek yogurt, 1 Tablespoon honey, and ½ teaspoon vanilla.

    Stir these together until well mixed. This will be your creamy white middle layer.

    Spoon this mixture over the frozen red layer, filling the molds to two-thirds full.

    Freeze this now two-layered popsicle for another hour to set the white layer.

  • 4 | Make the blue layer

    Blend 1 cup blueberries with 1 Tablespoon honey and a little water until smooth.

    Pour this blueberry mixture over the set white layer, filling the molds to the top.

    Now, insert popsicle sticks straight down into the mold.

    Freeze the molds for at least four hours to ensure everything is solidly set.

  • 5 | Serve

    To easily remove the popsicles from the molds, run the outside of the molds under warm water for a few seconds.

    This slight warmth will loosen the popsicles just enough so they can be pulled out without too much force.

    This makes getting the popsicles out of the molds much easier!

Storage

To store these 4th of July popsicles, first ensure they are fully frozen and solid in the mold.

Then remove the popsicles from their molds and wrap each one individually in plastic wrap or place them in airtight freezer bags (to prevent them from absorbing any odors from the freezer and getting freezer burn).

Then store in the freezer for up to 2 months.

Ingredients
  

Red Layer

  • 1 cup strawberries or raspberries
  • 1 Tablespoon honey or maple syrup
  • 1 to 2 Tablespoons water if needed, for blending

White Layer

  • ¾ cup Greek yogurt
  • 1 Tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract

Blue Layer

  • 1 cup blueberries
  • 1 Tablespoon honey or maple syrup
  • 1 to 2 Tablespoons water

Equipment

  • measuring bowls and spoons
  • blender
  • popsicle mold for 12 popsicles
  • mixer and mixing bowl
  • 12 popsicle sticks

Instructions
 

  • In a blender, blend strawberries with honey and a little water until smooth.
    1 cup strawberries or raspberries, 1 Tablespoon honey or maple syrup, 1 to 2 Tablespoons water
  • Fill popsicle molds ⅓ of the way.
  • Freeze for about 1 hour.
  • Mix Greek yogurt, honey, and vanilla in a mixing bowl.
    ¾ cup Greek yogurt, 1 Tablespoon honey or maple syrup, ½ teaspoon vanilla extract
  • Spoon this mixture on top of the frozen red layer so that it fills up 2/3 of the mold.
  • Freeze for another 1 hour.
  • In a blender, blend blueberries with honey and a little water.
    1 cup blueberries, 1 Tablespoon honey or maple syrup, 1 to 2 Tablespoons water
  • Pour on top of the white layer and fill up the rest of the mold.
  • Insert popsicle sticks and freeze for at least 4 hours.
  • To serve, run the popsicle molds under warm water for a few seconds to release them easily.

Notes
