
Why I love this Christmas tree quesadillas recipe
I started making these Christmas tree quesadillas a few years ago when I needed a quick, easy, and fun appetizer for a last-minute holiday party.
They were such a hit that they’ve become a tradition ever since!
The seasoned chicken and melted cheese pair perfectly with the bright green spinach tortillas.
And when you add halved cherry tomatoes as ornaments, it transforms into a festive, Christmas-tree shaped appetizer that’s almost too cute to eat. Almost.
Plus, they’re super easy to put together, and easy to serve for a crowd.
I usually put them out on a warming tray so they stay warm on a buffet. Which makes them perfect for a party.

Ingredients

Here is your shopping list (for 12 quesadilla quarters):
- Meat – 12 oz cooked chicken (cut into small pieces). I usually use rotisserie chicken but you can cook your own if you prefer.
- Spices – 1 Tablespoon plus 1 teaspoon Mexican seasoning(Quesadilla, Fajita or Taco seasoning will work)
- Fresh produce – 1 lime, 6 or 7 cherry tomatoes for garnish.
- Bread – 6 spinach tortillas. These are green so will give the Christmas tree its color.
- Dairy – 3 cups shredded Mexican cheese
- Condiments – ½ cup red salsa, ½ cup green salsa, ½ cup queso.
Substitutions & Additions
- You can omit the chicken if you prefer cheese quesadillas
- Cheddar cheese or Monterey Jack cheese will work instead of the Mexican cheese.
- Add beans or corn to the quesadillas for extra fullness.
How to make Christmas tree quesadillas

1 | Prep work
Start by chopping the cooked chicken into small, bite-sized pieces. You can also shred it if you prefer.
Juice half the lime to get about 1 Tablespoon lime juice.
Cut one of the cherry tomatoes into quarters length-wise. We’ll use this to create a tree topper.
Cut the rest of the cherry tomatoes in half. These will be the ornaments.
Preheat a skillet over medium heat. It’s important to give the skillet enough time to heat up so that the tortillas cook evenly.
Also, preheat your oven to 250°F. This will be used to keep your quesadillas warm as you prepare the rest. If you have a warming drawer, that’s a great alternative to use.
2 | Season the chicken
In a mixing bowl, combine the chopped chicken with 1 Tablespoon plus 1 teaspoon of Mexican seasoning and 1 Tablespoon of lime juice.
The lime juice helps to keep the chicken moist.
Feel free to adjust the seasoning based on your preference—if you like it spicier, you can add a bit more seasoning or even some chili powder.
3 | Cook the quesadillas
Place a tortilla into the preheated skillet. There’s no need for oil or butter, as the tortillas will toast nicely on their own.
Evenly sprinkle 1 cup of shredded cheese over the tortilla.
Distribute ½ cup of the seasoned chicken over the cheese.
Add dollops of red salsa, green salsa, and queso on top of the chicken.
These add layers of flavor and moisture to the quesadilla.
Top with another tortilla to complete the quesadilla.
Cook until the cheese is fully melted and the chicken is heated through, which usually takes about 3 to 4 minutes per side.
Keep an eye on the quesadilla to avoid burning the tortillas.
Once cooked, transfer the quesadilla to a baking sheet and place it in the warm oven while you prepare the remaining quesadillas.
4 | Make the Christmas tree shape
Cut each quesadilla into four equal pieces using a sharp knife or a pizza cutter for clean, even cuts.
On a serving platter, arrange the pieces in the shape of a Christmas tree.
Start by placing one piece at the top with the point facing upward.
Then create a second row under the first one with the points facing up and the rounded edge on the bottom. The top outside edges should be slightly inside the corners of the first row. The bottom outside edges should be sticking out past it to form a jagged Christmas tree shaped triangle.
Do the same for the third row, but use three quesadilla quarters.
Then create the bottom row with four pieces.
You’ll have 2 pieces left over. I usually just add them to the middle of the bottom row. But you could also save them to replenish the platter later.
I like to arrange the quesadillas on a warming tray if I’m serving them on a buffet. That way they stay hot and the cheese will still be melt-y.5 | Add the “ornaments” and serve
Finally, add the halved cherry tomatoes to look like ornaments by placing them on the quesadilla pieces.
To create the tree topper, place the quartered cherry tomato at the top in a star shape.
Serving suggestions
I like to serve this Christmas tree appetizer with a selection of toppings and dips such as guacamole, salsa, pico de gallo, extra grated cheese, and cheese dip so people can add what they like.
How to make a big batch
To make a big batch, you can double or triple the recipe.
Then either make more than one Christmas tree platter.
Or if you only want one tray, you can create more than one Christmas tree design stacked on top of each other.
How to make ahead
To make the quesadillas in advance, you can assemble them a few hours in advance by layering the tortillas, cheese, chicken, and salsas. (But do not cook them yet.)
Stack the uncooked quesadillas between sheets of parchment paper in an airtight container and refrigerate.
Just before serving, cook them as instructed above and assemble the Christmas tree shape.
Storage
To store Christmas Tree Quesadillas, first allow them to cool to room temperature.
Once cooled, place them in an airtight container, separating each layer with parchment or wax paper to prevent sticking. Store the container in the refrigerator for up to 3 days.
For longer storage, you can freeze them by wrapping each quesadilla individually in plastic wrap and placing them in a freezer-safe bag or container. They can be frozen for up to 2 months.
When ready to enjoy, reheat in a skillet over medium heat until warmed through and crispy, or bake in the oven at 350°F until heated.

Instructions

- Place a tortilla on top to create a quesadilla. Flip the quesadilla over so the other side can brown.
- Cook until the cheese has fully melted and the chicken is heated through, about 3 to 4 minutes per side.
- Remove the quesadilla from the pan and keep warm on a baking sheet in the oven while you make two more quesadillas.
- Cut each quesadilla into four equal pieces.
- On a serving platter or warming tray, place one quesadilla piece at the top, with the point pointing up.
- Place two pieces under the first piece with the points up and rounded sides down. The outside edges should be narrower than the top piece at the top and wider at the bottom so it forms a jagged triangle.
- Place three pieces under the two pieces.
- Then place four pieces under the three pieces. You should now have a Christmas tree shape with a couple of extra pieces of quesadilla. I usually just add them into the bottom row. But you could save them to replenish the plate later.
- Place cherry tomato halves on the quesadillas to act as ornaments and cut one in quarters to be a star at the top of the tree.
Notes
- Taco seasoning, quesadilla seasoning or fajita seasoning will all work for Mexican seasoning.
- Omit the chicken if you prefer cheese quesadillas.
- Add corn and/or beans if you want more filling.
