This Christmas Tree Quesadillas recipe features layers of cheesy chicken-filled spinach tortillas served in a Christmas tree shape. The perfect festive appetizer for a holiday party.
Mix the chopped chicken with Mexican seasoning and lime juice.
12 oz cooked chicken, 1 Tablespoon plus 1 teaspoon Mexican seasoning , 1 Tablespoon lime juice
Place a tortilla in a skillet on medium heat.
6 spinach tortillas
Sprinkle 1 cup of shredded cheese to cover the tortilla.
3 cups shredded Mexican cheese
Place ½ cup of the chopped chicken on top of the cheese.
Dollop red salsa, green salsa, and queso on the cheese/chicken.
½ cup red salsa, ½ cup green salsa, ½ cup queso
Place a tortilla on top to create a quesadilla. Flip the quesadilla over so the other side can brown.
Cook until the cheese has fully melted and the chicken is heated through, about 3 to 4 minutes per side.
Remove the quesadilla from the pan and keep warm on a baking sheet in the oven while you make two more quesadillas.
Cut each quesadilla into four equal pieces.
On a serving platter or warming tray, place one quesadilla piece at the top, with the point pointing up.
Place two pieces under the first piece with the points up and rounded sides down. The outside edges should be narrower than the top piece at the top and wider at the bottom so it forms a jagged triangle.
Place three pieces under the two pieces.
Then place four pieces under the three pieces. You should now have a Christmas tree shape with a couple of extra pieces of quesadilla. I usually just add them into the bottom row. But you could save them to replenish the plate later.
Place cherry tomato halves on the quesadillas to act as ornaments and cut one in quarters to be a star at the top of the tree.
Notes
Taco seasoning, quesadilla seasoning or fajita seasoning will all work for Mexican seasoning.
Omit the chicken if you prefer cheese quesadillas.
