This gingerbread cookies recipe combines dark brown sugar, molasses, ginger and spices to create deliciously spiced cookies that are perfect for festive decorating.
1cupunsalted butterroom temperature (if using a mixer)
1¾cupdark brown sugarpacked
¼cupmolasses
2largeeggsroom temperature (if using a mixer)
2teaspoonscinnamon
1teaspoonallspice
1teaspoonground ginger
1teaspoonsalt
4cupsall purpose flour
Instructions
In the bowl of a food processor or in the bowl of a stand mixer fitted with a paddle attachment, cream together the dark brown sugar and unsalted butter.
1 cup unsalted butter, 1¾ cup dark brown sugar
Mix in molasses and eggs.
¼ cup molasses , 2 large eggs
Add cinnamon, allspice, ginger, and salt with 1 cup of flour. Mix until combined.
Slowly add the rest of the flour ½ cup at a time until all of the flour is mixed. Do not over mix.
Roll out dough to ¼” to ⅜” thick.
Place the dough into the refrigerator for at least 2 hours and up to overnight.
Preheat the oven to 350℉ and line a baking sheet with parchment paper.
Cut out your desired shapes and place onto the baking sheet.
Bake for 12 to 15 minutes or until the tops of the cookies no longer look shiny.
Let the cookies cool on the cookie sheet for about 10 minutes before transferring to a cooling rack.
Once cookies are completely cool, decorate as desired.
Notes
Rolling out the cookie dough between two sheets of parchment paper prevents it from sticking to your rolling pin.
Chilling the cookie dough before cutting out the gingerbread men makes them much easier to cut and transfer to the baking sheets. It also prevents the cookies from spreading too much in the oven so they keep their shape better.
