This easy bruschetta pasta salad combines juicy tomatoes, fresh basil, garlic and Parmesan with bow tie pasta for a fresh, flavorful make-ahead side dish.

Ingredients

Roma tomatoes
diced

small bunch fresh basil
chopped (about ¼ cup)

balsamic vinegar

olive oil

teaspoon
garlic clove
minced

teaspoon
oregano

ounces
bow tie noodles
¼
cup
grated parmesan cheese
salt and pepper to taste
Instructions
Add the tomatoes, basil, balsamic vinegar, olive oil, garlic and oregano to a large bowl. Stir to combine.
3 Roma tomatoes,
1 small bunch fresh basil,
2 Tablespoons balsamic vinegar,
1 Tablespoon olive oil,
1 teaspoon garlic clove,
½ teaspoon oregano
Chill for at least 10 minutes.
Meanwhile, add the pasta to a pot of boiling water, cook according to the package until the noodles are tender.
8 ounces bow tie noodles
Drain into a colander and run under cold water for a few minutes until noodles are chilled.
Add the chilled noodles, Parmesan cheese and salt and pepper to the bowl.
¼ cup grated parmesan cheese,
salt and pepper to taste
Toss to combine.
Cover and chill for at least 30 minutes (and up to 24 hours) before serving
