This sugar cookie fruit pizza is a delightful and refreshing dessert recipe that features a sweet sugar cookie crust and delicious cream cheese frosting topped with a vibrant assortment of fresh fruit. The perfect summer treat!
Using a mixer and medium-sized mixing bowl, cream the butter and sugar together until light and fluffy, about 2 minutes.
Add the egg and mix until combined.
Add the baking powder and flour. Use the mixer on a low speed to gently incorporate the dry ingredients until no dry pockets remain in the dough.
Spread the cookie dough out on a 12-inch pizza pan and use a fork to poke holes in the cookie dough.
Bake for 13 minutes.
Cool the cookie crust on a wire cooling rack until no longer warm, at least 20 minutes.
While the cookie crust is baking, prepare the frosting. Use the mixer to combine the cream cheese, powdered sugar, and vanilla in a mixing bowl.
Spread the frosting over the top of the crust.

You can prepare the crust and frosting ahead of time. Store them separately in the fridge covered in plastic wrap for up to 3 days. Then put the pizza together and decorate with fruit just before serving.
