1chocolate cake,made from a cake mix or your favorite recipe
1cupwhite candy melts
¼cupred candy melts
¼cupblue candy melts
Star sprinkles
3teaspoonsCoconut oil
Instructions
Make the cake pop dough
Bake the cake using the instructions on the box or recipe. Let it cool completely before continuing.
Break the cake up into small bits.
Put it in a food processor or blender and pulse or blend on low speed for 1 to 2 minutes.
Stir to make sure the large pieces are broken up.
Blend for another minute and stir again.
Add 1 Tablespoon of water and blend for 2 to 3 minutes.
You will see the cake crumbs begin to look like a dough.
Add one more Tablespoon of water and blend for another 30 to 45 seconds. It should stick together if you squeeze some of it in your hand.
Make the cakesicle
Melt half of the white candy melts.
If it’s too thick add in 1 teaspoon of coconut oil and mix until smooth.
Pour 1 spoonful of candy coating into the mold. Spread candy up the sides of the mold. If more chocolate is needed to cover the center do so.
Slide in the popsicle sticks to the center making sure they are as even as possible. They should hover above the chocolate, not point down into it.
Let the chocolate set before continuing. You can speed up the process by freezing for 15 minutes (no more no less or you risk cracking the chocolate). Make sure they are flat to prevent the chocolate from setting unevenly.
Use a small cookie scoop to portion out the cake pop dough. Press it gently into the mold being careful not to break the candy coating.
Melt the other half of the white chocolate candy melts, following the same process as above.
Cover the top of the cakesicles with the melted chocolate. Clean up the edges as much as possible.
Let the candy coating harden. You can freeze it for another 5 minutes to speed up the process.
Remove the molds
Carefully loosen the mold, starting from the top of the cakesicle. Peel it off until the entire pop is free.
Push the sticks up through the mold to completely remove the cakesicles.
Use a pair of clean scissors to carefully trim off any excess chocolate from around the edges.
If the sides are not fully covered, dab a bit of the melted chocolate into the exposed areas and let dry.
Rest them on a parchment-lined baking sheet.
Decorate
Melt the red and blue candy melts inside of their respective piping bags, following the same process as above.
Cut a small hole in the end of the bags and draw lines across the top of the cakescicles.
Add sprinkles immediately before the candy has a chance to start setting.
Let sit until hardened completely, about 20 to 30 minutes.
Notes
To melt candy melts, put them in a glass bowl and cook at 50% power in the microwave for 30 seconds. Take the bowl out and stir them. Repeat this process until the chocolate is completely melted.
If the stick won’t stay inside the dough, remove it from the mold, dip in melted chocolate and insert back into the pop. Let set for 10 to 15 minutes.
