
Why I love these St Patrick’s Day cake balls
St. Patrick’s Day is just around the corner, and there’s no better way to celebrate than with this dessert recipe that’s as festive as it is delicious.
Cake balls are one of my favorite ways to create a dessert that doubles as decor.
And these green and white ones are no exception.
They’re made with cake mix so they’re incredibly easy to whip up, their small size makes them perfect for serving to a crowd and you can easily convert them to cake pops by adding a lollipop stick.
Although, they look so pretty on a tray, you may have to convince your guests to eat them. But once they do, these little treats will be gone in no time!
Ingredients

Here is your shopping list (for 36 to 48 cake balls, depending on the size):
- Cake mix – 1 package white or yellow cake mix. I used Pillsbury Moist Supreme.
- Oil – ½ cup vegetable oil (or whatever your cake mix calls for)
- Eggs – 3 eggs (or whatever your cake mix calls for)
- Coloring – Green food coloring – Either the gel or liquid versions will work, but the gel ones usually result in a darker color.
- Sugar – 4 cups powdered sugar
- Dairy – 1 cup (or 2 sticks) unsalted butter, 3 Tablespoons milk
- Flavoring – 1 teaspoon vanilla extract
- Seasoning – 1 teaspoon salt
- Chocolate – 2 cups white chocolate chips or candy melts
- Candy sprinkles – 3 Tablespoons St. Patrick’s Day themed sprinkles
Substitutions & Additions
- You can use salted butter if that’s what you have on hand. In this case, decrease the added salt to ½ teaspoon.
How to make St Patrick’s Day cake balls

1 | Prep work
Take the butter out of the refrigerator a couple of hours ahead of time so it can soften before you use it. This makes it much easier to mix and results in a creamier frosting.
Prepare your baking pan by either spraying it with non-stick spray or lining it with parchment paper. I prefer lining it with parchment paper since it makes removing the cake much easier after baking.
Line a baking sheet with parchment paper. We will be using this to put the cake balls on.
Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature when your batter is ready.
2 | Mix the batter
In the bowl of a stand mixer, add the contents of 1 box of cake mix, 1 cup water, ½ cup vegetable oil, and 3 eggs. The amounts of these ingredients may vary depending on the cake mix you are using. Follow the directions on the box for the best results.
Use the paddle attachment to combine the ingredients. Start mixing on low speed to prevent splattering, then gradually increase to medium speed.
Scrape down the sides of the bowl with a spatula frequently to ensure all ingredients are fully incorporated. This prevents pockets of dry cake mix in your batter.
Then add a few drops of green food color and mix again.
If it’s not dark enough you may need to add a little more until you get the color you are looking for.
3 | Bake the cake mix
Pour the batter into your prepared baking dish, smoothing out the top with a spatula for even baking.
Place the dish in the preheated oven and bake for 30 to 35 minutes.
To check if it is done, insert a toothpick into the center of the cake; it should come out clean.
Let the cake sit in the pan for about 5 minutes then remove it from the pan onto a wire rack.
Allow the cake to cool completely before proceeding. Cooling on a rack allows air to circulate around the cake, helping it cool faster and preventing the bottom from becoming soggy.
4 | Make the frosting
In the stand mixer bowl, combine half of the powdered sugar with the softened butter, 1 teaspoon vanilla, and 1 teaspoon of salt. Mix on low speed to avoid a sugar cloud.
Once smooth, add the remaining powdered sugar and 3 Tablespoons of milk. Mix on low until incorporated and scrape down the sides to ensure even mixing.
Then increase to medium speed and beat for about a minute until the frosting is light and fluffy.
5 | Make the cake ball filling
Once the cake has cooled, crumble it into the mixing bowl of the stand mixer.
Add approximately 1 cup of frosting to the crumbled cake.
Using the paddle attachment, mix on low speed until the cake and frosting are well combined.
The mixture should be moist enough to hold together but not overly sticky.
Use a small ice cream scoop or tablespoon to portion out the mixture, rolling each portion into a ball with your hands.
To prevent the mixture from sticking to your hands while you are rolling the cake balls, lightly dust them with powdered sugar or wear food-safe gloves.6 | Chill
Place the rolled cake balls onto the parchment-lined baking sheet.
Transfer the sheet to the fridge and let them chill for 15-30 minutes.
This will help them stick together, making them easier to dip in chocolate later.
7 | Melt the white chocolate
Place the white chocolate or candy melts in a microwave-safe bowl.
Heat in 30-second increments, stirring after each interval, until the chocolate is smooth and fully melted.
Be careful not to overheat, as chocolate can burn easily. Stirring in between helps distribute the heat evenly.
8 | Decorate
Remove the chilled cake balls from the fridge or freezer.
Using a spoon, dip each ball into the melted white chocolate, ensuring it’s fully coated.
Gently tap the spoon on the side of the bowl to let the excess chocolate drip off.
Place the dipped cake ball back onto the parchment paper.
Immediately sprinkle with St. Patrick’s day themed sprinkles before the chocolate sets. The chilled cake balls will cause the chocolate to harden quickly, so work fast for the best results.
If you wish to make these into cake pops, you can push the lollipop stick into the top of the cake ball right after you add the sprinkles.
If the white chocolate gets too thick to work with, you can put it back in the microwave for a few seconds. Or mix it with a teaspoon of coconut oil to keep it smooth.
Storage
Cake balls can be stored in an airtight container in the refrigerator for up to 3 days.
Using parchment paper between the layers will prevent them from sticking to each other.

- 1 teaspoon salt
- 3 Tablespoons milk
- 2 cups white chocolate chips or candy melts
- 3 Tablespoons St. Patrick’s Day themed sprinkles

- 9" x 13" baking dish
- parchment paper

- spatula (for scraping down the bowl)

- spoons (for dipping the balls in the white chocolate)

- small ice cream scoop or Tablespoon
Instructions
- Preheat the oven to 350℉.
- Spray or line a 9"x13" cake pan with parchment paper. Set aside.
- In the bowl of a stand mixer, combine the cake mix, water, oil and eggs. Mix thoroughly, scraping down the sides often.1 box white or yellow cake mix, 1 cup water, ½ cup oil, 3 large eggs
- Mix in enough green food coloring to achieve the desired green color.Green food coloring
- Transfer the batter to the prepared baking dish and bake in the preheated oven for 30-35 minutes or until the center is set. Allow to cool completely.
- In the bowl of a stand mixer, combine about half of the powdered sugar with the softened butter, vanilla and salt.4 cups powdered sugar, 1 cup (or 2 sticks) unsalted butter, 1 teaspoon vanilla, 1 teaspoon salt
- Mix on low speed until combined, scraping the sides often.
- Add in the remaining powdered sugar and the milk. Mix on low until combined. Scrape down the sides.3 Tablespoons milk
- Then mix on medium speed for about a minute or until the frosting is fluffy and smooth.
- Once the cake is cool, break it into pieces and transfer to the bowl of a stand mixer.
- Add in about 1 cup of the frosting.
- Using the paddle attachment, mix the crumbled up cake and the frosting on low just until combined.
- Use a small ice cream scoop or a tablespoon to measure out and roll the dough into small balls between your palms.
- Place the rolled balls on a parchment-lined baking sheet.
- Transfer the dough to the fridge and allow to chill for about 15 minutes or until firm.
- Place the white chocolate / candy melts in a medium microwave safe bowl and heat in 30 second increments, stirring between each one.2 cups white chocolate chips or candy melts
- Use a spoon to dip one cake ball in the melted white chocolate at a time. Carefully tap the excess white chocolate along the side of the bowl and transfer the dipped cake ball back to the parchment.
- Immediately sprinkle with the St. Patrick’s themed sprinkles. (White chocolate sets fast, especially on a chilled dough.)3 Tablespoons St. Patrick’s Day themed sprinkles
Notes
- Adjust the amount of water, oil and eggs to match the directions for your cake mix.
- To use salted butter instead of unsalted, decrease the added salt to ½ teaspoon.
