Mini Cherry Cheesecakes with Vanilla Wafer Crust

Made with cream cheese and vanilla wafers, this mini cherry cheesecakes recipe is super easy to make and the perfect size to serve at a party.

And it tastes just like a traditional cheesecake would without the hassle of making one!

WHAT YOU NEED

– vanilla wafers – butter melted – cream cheese – sugar – egg – vanilla – lemon juice – cherry pie filling

Prep work

Take the cream cheese out of the refrigerator a couple of hours ahead of time.  Pre-heat the oven to 375 F. Line the muffin tins with the baking cups.

Crush the wafers

Crush the vanilla wafers with a rolling pin. Putting them in a ziploc bag helps to keep them contained.

Make the crust

Melt the butter with low power in the microwave.  Mix the crushed wafers with the melted butter.  Cover the bottom of each baking cup with the crushed wafers and press down to form a crust.

Mix the batter

Mix the cream cheese with the mixer until it is smooth. Add the sugar, egg, vanilla and lemon juice. Mix again until smooth.

Put them together

Spoon the mixture into each of the muffin tins. Bake for 15 minutes.  Cool completely on a wire cooling rack.

Add the topping

Just before serving, top the cupcake with some cherry pie filling, and watch them disappear!
