Made with berries, yogurt and granola, this strawberry blueberry yogurt parfait is a super easy dessert or brunch recipe that is light and refreshing. Perfect for hot summer days.
In a mixing bowl, mix the yogurt and honey until well blended.
In another bowl, combine the blueberries and chopped strawberries.
Put 1/3 cup of the blueberry and strawberry mixture in the bottom of a cup, mason jar, or glass.
Spoon 1/3 cup of the yogurt and honey mix on top of the fruit.
Sprinkle 1/4 cup of granola on top of the yogurt.
Repeat the fruit, yogurt and granola layers a second time.
Serve immediately.
Notes
If you are serving the parfaits in mason jars or large glasses, you may need to add a third repetition of the yogurt, fruit and granola layers in order to fill them. This will decrease the number of servings you can get from one recipe.Parfaits can be made two to three days ahead of time and stored in the refrigerator until ready to serve.If making ahead of time, create the layers of fruit and yogurt in the glasses but don't add the granola (otherwise, it will get soggy). Sprinkle the granola on top just before serving. Substitutions:
For a healthier parfait that isn't as sweet, use plain yogurt instead of the vanilla flavor and omit the honey.
Thawed frozen berries can be used instead of fresh ones. But since they are mushy and have a higher liquid content, they work best if they are mixed into the yogurt rather than serving as a separate layer.
